Biryani is traditionally cooked in an earthen pot called a Hattiya, the rice and meat are layered, the bottom and top layers are always rice. Our Biriyani is made with saffron­spiced Basmati rice, further flavoured with cardamoms, lemon grass, cinnamon, cloves and fragrant curry leaves. Added to the rice is the meat, prawn, fish or vegetables, with ginger, turmeric and garlic, served with the biriyani is the meat, prawn, fish or vegetable curry, sweet aubergine curry and poppadom.

Lamprais is a popular Dutch dish in Sri Lanka. Traditionally, the rice is boiled in stock, then added to vegetables and meat and baked in a low oven after it is wrapped in a banana leaf. Baking the rice in a banana leaf gives a special flavour to the rice. Our lamprais is served with meat curry, sweet aubergine curry, and seeni sambola (tender sweet onions), served on the banana leaf.

Pittu is roasted rice flour mixed with freshly grated coconut and steamed in a bamboo mould which gives it a unique log shape. Lunu miris is a very spicy onion and chilli sambol
